If you follow @teamsoutherndoe on Instagram and Snapchat, you might have noticed our affixation with sweets.  But without a doubt our favorite treat in the office is the classic cupcake (oh and donuts, we really like donuts).  Sadly, cupcakes are not filled with wholesome ingredients and vitamins.  The good news?  The internet if chockfull of simple ways to make that funfetti boxed cake healthier!  You can use applesauce in place of oil and only use egg whites in place of whole eggs.   The bad news?  Finding a way to make that sugary + delicious icing healthier proves much more difficult.Today dreams are coming true.  We are offering an easy alternative to that sugary icing with… coconut milk!?  Yep, canned coconut milk!  You only need three ingredients to make this Oh “Deer” Icing and we promise that once you taste it, the thoughts of sticks of butter and cups of powdered sugar will be whipped away!

Recipe
13.5 fl. oz. can of unsweetened coconut milk (avoid the low fat version) 
1 ½ tsp. vanilla extract
2 tsp. honey

Allow your can of coconut milk to chill in the fridge overnight.  You’ll know the coconut milk is ready to be whipped when you can shake the can and not hear any liquid shaking about.  Scoop out the hardened coconut milk into a bowl.  Add the vanilla and honey.  Mix the three ingredients with a mixer until smooth!  Ice your cupcakes.

This amount of frosting will ice about 12 cupcakes.  You can make it a chocolate icing by adding some cocoa powder.  To keep your Oh “Deer” Icing looking its best, we recommend you keep your cupcakes chilled until it's time to serve them to your guests.
